We're here for Cowboy Caviar!

Delicious Cowboy Caviar is always a big hit for any game night, party, or just to have as the weekly snack ready in the fridge. And packed with veggies, it's a great health conscious dish! It's sweet, tangy, and pairs well with chips! Its not a salsa, but dips like one. If you enjoy western meals you'll enjoy this hands down! I always enjoyed it as my family made it, and have grown to keep it going weekly in my own home for my children to enjoy. So give it a try! And let me know how you enjoyed it in the comments below! Ingredients

  • 1 can black eyed peas

  • 1 can black beans

  • 1 can sweet corn

  • 1 bell pepper, diced

  • 3 roma tomatoes, diced

  • 2 avocado, diced

  • 1/3 cup onion, red or white, diced (preference red for that sweet flavor)

  • 1/4 cup cilantro, chopped up finely

  • 1 jalapeño, diced

Sauce Ingredients

  • 1/3 cup Olive oil

  • 3 tbsp Red wine vinegar

  • 2 tsp sugar or 1 tsp honey

  • 3 tbsp lemon or lime juice

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

Directions

Putting this dish together is super simple!

  1. Dice the bell pepper, tomatoes, avocado, onion, cilantro, and jalapeño into a large mixing bowl.

  2. Drain and rinse the black eyed peas, black beans and corn, add to bowl.

  3. In a small bowl, mix the sauce ingredients - olive oil, red wine vinegar, sugar or honey, lemon or lime juice, salt, pepper and garlic powder.

  4. Fold the sauce into the mix.

  5. You have the option to chill this or serve right away with chips! Enjoy!

**It should keep a week well in a sealed container. I, myself, prepare this once a week to enjoy with my family as a fun, flavorful snack or for parties!

**Bonus! You could sauté the corn and onions, to add a smoky char flavor for added spice! Sautéed with a dash of pepper is delicious!
